Homemade Coconut Ice Cream For the Win!
I prefer to make my own ice cream because I then have total control over the ingredients. The following came from a friend. It is a combination of recipes from the Ben & Jerry's book, and some coconut milk recipes online. It's delicious, and it keeps the sugar and artificials out while keeping the flavor and the texture you know you love!
2 eggs
2 cans organic coconut milk (a little over 3 cups)
2/3 cup cocoa powder
6 Tbs. agave nectar **
1 Tbs. vanilla extract
Beat the eggs until fluffy. Add a little coconut milk and the cocoa powder and beat until the cocoa is completely blended in. Add the rest of the ingredients and beat until thoroughly blended.
I try to remember to put the bowl in the freezer for at least 8 hours and make sure your freezer is at 0 degrees (max) before I put it into the ice cream maker. Very tasty.
**I used to use stevia. You'd have to fiddle around to taste because all stevias are different. I used 'kal' brand and put in about 3 (heaping) tiny scoops (which comes in the container).
TIP: When making ice cream with eggs, heat them with the coconut milk until it coats the back of a spoon and you can draw a line through it. Then add the cocoa and/or whatever else (like raw almond butter) and stevia. Then let it cool in the freezer for 1/2 hour or so, then transfer it to the ice cream maker.
The possibilities to use as ingredients are endless, especially in summer. Fresh strawberries, peaches, blueberries, blackberries, all are packed with antioxidants and nutrients, and they go with the coconut flavor of the ice cream so well.

The Goomday Festival in Coconut Grove, Florida
Coconut Grove is one of Miami’s most unique districts, beginning as an independent city called “Cocoanut Grove,” and being subsequently swallowed up by Miami in a bloodless annexation. Bahamian culture plays a large role in the identity of the community, thanks to a substantial settling of Bahamians back in the 1880s. It is now known as “Miami’s Food-court” for reasons that are obvious to even the densest individual. Countless restaurants and open-air cafes dominate the landscape, making Coconut Grove a perfect place to have a night out. One of my favorites is Tuscany, but there are plenty of other fantastic places as well. There are numerous shopping opportunities here (as with almost all of Miami), and since the demarcation for the southern border of Coconut Grove is Biscayne Bay, there are numerous boating and sailing opportunities. All in all, there is enough to keep you busy in Coconut Grove for quite a long time. And I haven’t even gotten to the festivals.
In addition to being a gastronomic and consumer powerhouse, The Grove (as it is sometimes called) is also known for its varied and fantastic festivals and gatherings. Its world renowned art festival and famous King Mango Strut (a hilarious, tongue-in-cheek takeoff of the Orange Bowl parade) are favorites to many. My personal choice for festivals, however, is the Goombay Festival. For a few days in June, the Goombay Festival transforms mild-mannered Coconut Grove into celebration of Bahamian culture in the form of a Caribbean carnival. Junkanoo groups (Junkanoo is the traditional Bahamian street parade, usually featuring large groups wearing brightly colored clothes and yes, tons of cowbell) abound, and it can be difficult to tell if you are in Miami or Nassau. Between the junkanoo groups dancing and carousing, the rake-and-scrape music coming from dozens of different sources, the sizzling Caribbean food, the vendors trying to hawk their wares, and the spectators caught up in the spectacle, the excitement is always palpable, and there is always more conch salad than you can eat.
Next June, do yourself a favor and make your way down (or up, as your geographical location might dictate) and partake of the Goombay Festival in Coconut Grove. Depending on how much fun you are planning on having (and how much you feel like dealing with parking in the middle of a street festival), you might consider chartering some transportation, like a cab or (better yet) a limousine from Millenium Limo. Coconut Rice Served With Coconut Milk Drink
Ingredients:
4 cups of rice
1 large size coconut
1 kilogramme of chicken
Salt
Seasoning ( knorr chicken (2 cubes), curry, thyme)
1 medium size Onions
Onion, pepper and tomatoes (pureed)
2 cooking spoons of groundnut oil
Method:
Cut the chicken into servable sizes and rinse them. Pour into a pot and add 1 cube of knorr chicken, some grated onion and some salt and cook till the chicken becomes tender. Pour the 2 cooking spoon full of groundnut oil into a frying pan and when it becomes hot, pour the puree into it and stir it from time to time, add a little salt and seasoning and cook for 15 minutes, then pour the cooked chicken as well as the chicken stock into the puree and cook for another 5 minutes. The coconut is grated using a grater to get the coconut milk which will be used in cooking the rice (Coconut milk is a sweet, milky white cooking base derived from the meat of a matured coconut). Grate the onion as well and pour it into the coconut milk. Pour the coconut milk in a pot, add some salt, seasoning and bring to boil. Rinse the rice and pour it into the coconut milk and allow the rice to cook for 30 minutes. The coconut rice is ready to be eaten; some people may eat it plain while others may want some sauce added to it.
This serves 4 people
Method:
The drink from coconut milk is made by adding sugar and evaporated milk to the coconut milk and refrigerating it. This drink can be served alongside the coconut rice or taken alone.

Extraction of the Virgin Coconut Oil
The normal coconut oil is obtained by extracting the kernel of the dried coconuts. The main producer world wide is the Philippines. It has great uses in industry, commerce, cooking and many others. The most appreciated form of this oil is the virgin organic one.
The virgin organic oils are obtained from fresh coconuts. Unlike others oils, like the olive oil, for this oil is no government certifying its virginity. Though, in the Philippines DOST has been established. That is the Department of Science and Technology. Its standard is considered the international standard for certifying an oil as virgin and organic.
There are 3 main methods for obtaining the virgin organic coconut oil:
1. First method is to quick dry the fresh coconuts' meat or kernel. After this process is completed, the oil is pressed out of it.
2. The next method consists of transforming the raw oil in coconut milk. The method is called wet-milling. The coconuts are not quick dried in this method. But rather the oil is extracted directly from the fresh coconut. Then, the oil separated from the water. The separation can be achieved through various methods such as: mechanical centrifuge, fermentation, boiling or refrigeration.
3. The final method to obtain virgin organic coconut milk is called direct micro-expelling. The method implies adjusting the water content of the coconut. After this, by pressing the fresh calibrated coconut, the oil will flow freely.
All three methods are widely used for obtaining great oil from coconuts. The actual choice of the best method depends on the result we desire to achieve. The first method will result in a watery oil, the second in a milky oil, and the final one in a milky consistent virgin oil.
No matter what method is used to extract the oil, the final virgin organic coconut oil is first of all very healthy and also presents multiple uses in many areas.

How to Make Coconut Cream Pie
Coconut cream pie is a delicious dessert that has its place as an American classic. Though it may look intimidating, this is actually fairly easy to make.
Following are instructions on how to make coconut cream pie and some suggestions on how you can make the process easier.
The first thing you need if you're making coconut cream pie is a pie shell. You can use a pre-made one from the supermarket, but if you want a homemade pie shell, all you have to do is mix one cup flour with half a cup vegetable shortening and ¾ of a teaspoon of salt. When the dough looks like cornmeal, add a quarter of a cup of cold water. Roll the dough out flat with a rolling pin and shape it to the bottom and sides of the pie pan.
The next step in coconut cream pie is the filling. To make filling from scratch, mix three cups half and half with two eggs, ¾ a cup white sugar, ½ a cup flour and ¼ a teaspoon salt. Stir in a saucepan over low heat.
Toast one cup of shredded coconut by baking it in the oven at 350 degrees for 5 to 7 minutes. Put ¾ of the toasted coconut in the pie mixture and 1 teaspoon vanilla extract. Pour into your pie shell and chill for around three hours.
If you don't have time to make the coconut cream pie filling from scratch, use a pudding mix like Rawleigh's Coconut Dessert Mix, prepare according to the package instructions, and still add in the toasted coconut. After the pie filling has fully firmed off, cover the top of the pie with whipped topping and add the remainder of the toasted coconut on top.
